LES HORS CLASSE
In French we speak of “Coeur de Terroir” - The heart of the vines. - The very best part of a given slope. Wines from these small zones are harvested and fermented separately so that they express the very best of themselves and the ground they grow in.
These champagnes are: « Les Genevraux », « La Croix Joly », « Brisefer », « Maisoncelle » and « La Côte en Bosses ».
We also produce two Coteaux Champenois in the same spirit: « Les Rieux » and « Les Vignes de Mizy ».

Our Single Vineyards Collection are always VINTAGES, and EXTRA BRUT, for a more distinctive expression.

Ideal for Aperitif, with simple natural and tasty dishes, such as oysters, Sushi, or raw fish.
But most important of all is the serving temperature. The golden rule is never below 12°C. Serve in a large white wine glass to allow the wine to express itself.
The wines are fully aged on lees, and clarified by natural decanting, without filtration or fining.
This Cuvée, extra aged on lees, reveals the Pinot Meunier Character, favorite grape-variety in the Marne Valley area and iconic identity of our vineyard. We use a high proportion of Reserve Wine from a Solera started in 1998.
Malolactic fermentation completed.
Aged in the bottle for 15 to 27 months.

Pair with delicate dishes such as: thinly-sliced Jabugo ham, foie gras, caviar, mature comté or parmigiano reggiano, or drink alone as an aperitif.

Deep and intense, this cuvée is aged in our perpetual reserve (solera) which started in 1998.
This wine tells the story of our family estate.
Every year we bottle one third of our reserve wine (some aged in wooden barrels and some in stainless steel) to make Trio S.
This volume is replaced by wine from the latest harvest.
The young wine brings energy and freshness whilst the older wines bring a sense of the past.
The bottling and disgorgement dates are printed on the back label.
